Snow crab is one of the main species fished in Quebec. This well-known crustacean’s unique flesh—delicate strings of orange-pink on the outside and white on the inside—make it a very popular and lucrative species. Its fine, delicious flavor makes it a big hit with consumers.
General Information:
The snow crab is a crustacean with five pairs of long flattened legs, two of which are tipped with powerful claws. Its shell is orangish brown on the back and cream-colored on the stomach. When cooked, the shell turns bright orange. The snow crab is fished from April to August in the deep waters of the Gulf of St. Lawrence and the St. Lawrence River, where the water is cold and salty.
