The coral of the scallop, which can vary from orangish pink to creamy white in color, is also very delicious and popular with seafood lovers. General InformationOnce best known as coquille St-Jacques, scallops are saltwater mollusks that are found in waters 15 m to 20 m deep. They reach their commercial size after 5 to 7 years and can live to as old as 30. They are fished from May to September.
