
General InformationThe king of seafood, lobster has a long body with five pairs of legs. The first pair of legs is armed with two large claws, with one larger than the other. Lobster is available live and in a full range of fresh, refrigerated, and frozen products.
CharacteristicsIts entire body is covered in a hard shell that can vary in color from greenish blue to reddish brown when the lobster is alive. Upon cooking, the lobster changes to an orangish red color. The white meat has a pleasantly firm and dense texture and a deliciously rich flavor. Lobster meat lends itself well to all sorts of dishes, and every part of the animal can be used in a variety of recipes. The possible uses for lobster meat are practically limitless.
