General InformationHalibut is the largest of all flat fish and can reach 2.5 meters in length and weigh over 300 kg. Only one side of the halibut is colored, and it varies from dark to light brown. Both of its eyes are found on the colored side of the fish. The other side, known as its blind side, is usually white and tends to become grey over time. This fish lives in the deep waters of the Western Atlantic and the Gulf of St. Lawrence and only rarely enters areas less than 60 meters deep. It is fished from April until September.
